Tarta De Santiago is an amazing dessert to serve anytime but just perfect for dessert after a paella dinner and to celebrate National Day of Galicia! We made two and tasted one last night and it’s sooooo delicious! Can’t wait for my next Spanish dinner with friends.
July 25th was chosen because it’s the day of Saint James (Santiago). In Spain the holy days are still very popular, the days are also so-called ‘name day’s’, days when to celebrate everybody who’s named after the saint of that day.

NOTE: The stencil for the Saint James cross can be found in a search on the internet. Here’s one of many. You find it, print it and then cut it out. Place on top of the cooled cake and dust with powdered sugar then remove the stencil.

- ▢ 2 cups ground almond flour. I used the ground almond flour that can be purchased at the grocery but you may grind your own if you want
- ▢ 1 1/4 cups sugar
- ▢ 5 eggs
- ▢ lemon zest and orange zest from whole lemon and whole orange
- ▢ 1 tsp ground cinnamon
- ▢ 1 t almond flavoring
- Preheat oven 350 degrees
- Beat the egg and sugar until the mixture is pale and creamy.
- Add zest, flavoring cinnamon.
- Fold in the ground almonds
- Grease 10 inch springform
- to 40 minutes, or until brown.
- Done when toothpick comes out clean
- Cool completely and dust with powdered sugar.
