Tieton Cider Works Ciders are artisanally crafted ciders pressed from organically grown cider apples and dessert apples from the family owned organic orchard, Harmony Orchards in Tieton,Washington. This is located in the Yakima Valley of the Pacific Northwest in Washington State.
Tieton Ciders are a great alternative to pairings with food. Like wine, ciders have similar flavor and characteristics such as acidity, sugar levels and tannins that are the same characteristics that are necessary for a great wine pairing.
They are refreshing and will pair with a cold winter night’s meal as well a sweltering summer night.
When describing wines that have a unique characteristic or quality due to its specific growing site, the term often used for this is terrior. You can taste the “sense of place” which is defined by the climate,the aspect or geography of the area and the soils where the fruit is grown. All of these qualities play a role in giving the wine’s distinctive character.
The fertile soil, long and dry sunny days combined with cool nights are in just the right combination to produce ripe apples,pears,apricots and cherries with complex flavors and crisp acidity for exceptional ciders.
Pairings are my passion and I believe in creating the perfect pairing that places the cider front and center while complementing the flavors of the dish.
The touch of semi-sweetness and spices of Tieton’s Cherry Cider’s juicy cherry flavors have just the right amount of fruit,tannins and acidity to pair with roasted salmon over coals that is glazed with the tart-sweet cherry preserves which naturally pair with cinnamon and clove. The addition of smoky chipotle adds another level of flavor which also pairs with the big, but not overpowering, flavors of the cider. If you have been drinking rose’ wines, this will be a delicious alternative.
Look at the mouthwatering deep cherry color of the cider! It is full of flavor and will pair perfectly with the recipe in this post. And, if I had a piece of warm,homemade cherry pie, I would pair it with that too!

- Use 4 to 6 pieces or one whole side of your favorite salmon for this recipe!
- 1 jar of Cherry Preserves
- 1 can of Chipotle in Adobo Sauce. Only part of the can will be used. Freeze the rest.
- You control the heat by the amount you will use.
- Spoon Cherry Preserves into a small bowl.
- From the can of Chipotles, mince one pepper and add to preserves.
- Add a spoonful or two of the Adobo Sauce from the can. Stir. Taste.
- Add more or less according to taste BUT be sure to add enough.
- You want to taste the smokiness!
- Brush glaze liberally over each piece of salmon just before it’s ready to take off grill.
- If you have leftover sauce, refrigerate and use within a week or two.
