In celebration of warm weather and fresh foods, Green BEAN Delivery is inviting foodies everywhere to participate in its first-ever recipe contest, Plate Proud. We’d love for you to participate and share the contest with your readers so they can also take advantage of this festive competition.
Each participant is asked to submit their favorite original recipe in one—or all—of five categories for a chance to win impressive culinary prizes, including a grill set, planters, placemats, a mandoline slicer and much more. Categories include everything from recipes on the grill to packed lunches to meals using only local ingredients. All winning recipes will be highlighted on the contest website.

For $37, I received this luscious bounty of goodies which included 2 large avocados, 2 limes, 1 large organic yellow onion, 2 large and beautifully green organic zucchinis, 2 organic blood oranges, 1 container of organic blueberries, 2 large organic portobello mushrooms, 8 oz of fresh and organic baby spinach and a fragrant bunch of organic cilantro. Mouthwateringly gorgeous!
Hearty Roasted Vegetable Salad with Lime Cilantro Honey Vinaigrette for Dinner
Use just about any vegetable or fruit that is delivered to your door! No recipe needed!
This fresh bounty of goodness was right on time for dinner. I made large and filling salad with all of the ingredients-no recipe needed. First, I roasted the onions, portobellos and zucchini with olive oil, dried herbs and seasonings in the oven until lightly caramelized. Second, while the vegetables were cooling to room temperature, I blended up a Cilantro Lime Honey Vinaigrette with honey, mustard, cumin and garlic. Diced all of the veggies, blood oranges and avocados into bite-sized pieces and added the spinach to the mix. Finally, I tossed the salad with the vinaigrette and added local goat cheese, toasted Pepita seeds and my family enjoyed every fresh and delicious bite!
