Whiskey with Lisa: Still Austin Whiskey Co is an Urban Oasis for Lovers of Texas Whiskey

Living in Texas definitely has its perks.We have the best in the world brisket and bbq, tacos, outdoor music and food events and…….. bourbon whiskey!

Recently, my fellow Austin Food Bloggers and I enjoyed a Zoom Happy Hour sipping on Still Austin’s Cask Strength Bourbon whiskey with a bottle so generously provided by Still Austin Distillery and distiller John Schrepel and a little friendly trivia game afterwards. What a fun evening!

That’s right! We’ve got a Texas Whiskey Trail that will make your head spin with all the finest of what Texas has to offer.

If you are looking for me, you’ll often find me underneath an umbrella at one of the many patio picnic tables sipping on one (or three ) of their fabulous and refreshing handcrafted cocktails made with Still Austin Bourbon Whiskey. Still Austin Whiskey Co is a grain-to-glass distillery located right in the middle of urban Austin on St. Elmo.  Tucked into an area with an industrial vibe near several local  Austin-based products, you’ll find this oasis of handcrafted bourbon whiskies, the nicest food truck, outdoor music and a stellar bar where the bartenders will  shake up and serve some of the best cocktails around.

Recently, I’ve had the luck to grab up a bottle of Limited Edition Still Austin Cask Strength Bourbon Whiskey and the latest -Still Austin Straight Wheat Whiskey.

For those who tried but weren’t able to obtain one of these coveted bottle, I am truly sorry. I am sure that Nancy -the column still -is working hard distilling more for future batches of goodness!

Still Austin Cask Strength Bourbon Whiskey 118 proof   Mash Bill: 70% white corn, 25% rye, 5% malted barley 100% Texas

The Cask Strength is the uncut version of The Musician and it is big on flavor and a long, long finish. Its everything that The Musician is but more. More intensity, that is. From the first sip to the last, you’ll experience a perfect melody of flavors and aromas of brûléed brown sugar, baked apple in warm spices of cinnamon and nutmeg, vanilla, dried figs and cherries, toasted hazelnuts and dark chocolate. Whoa! It’s a mouthful of flavor that leaves you wanting more and more!

Unfortunately, I only have one bottle!

Still Austin Straight Wheat Whiskey. 105.5 proof  100% Winter Hawk Wheat 600 bottles

This does not disappoint. At first sip it is smooth and silky on the palate with a hint of light brown sugar, warm and buttery apple pie where the vanilla swirls  in the mouth. Dried apricots, ripe apple and pear create such a balance of flavors – well-  I just hope they will make more very soon!

This is definitely a sipping whiskey to be enjoyed through out the year.

Still Apple Pie Cocktail by Cocktails with Lisa

Nothing is better than apple pie with warm spices and I thave now recreated those flavors of everyone’s favorite pie. The flavors of the bourbon whiskey pair so well with the ginger syrup,  apple butter with warm spices and the apple pie spice sugared rim which sends it over the top!

Still Austin Bourbon Whiskey is perfect for this cocktail!
Ingredients
  • 2 oz Still Austin Bourbon Whiskey Musician Bourbon Whiskey
  • 1 oz apple butter ( 2 big muddler spoonfuls aka long handled bar spoon)
  • ¾ oz fresh lemon juice
  • ¾ oz ginger syrup
  • 2-3 dashes old fashioned bitters
  • ice
  • apple slices
  • cinnamon sticks
  • extra lemon for rimming
  • ice
  • sugar
  • apple pie spice
  • ground cinnamon
  • shaker
  • highball glass
  • <br>
Instructions
  1. For the rim: On a plate, mix together 4 tablespoons granulated sugar and 1 teaspoon of apple pie spice and 1/4 tsp of cinnamon.
  2. Take a lemon wedge and rub each glass around the rim, then dip in apple pie sugar mixture.
  3. Set aside
  4. For the ginger syrup: In a saucepan, mix equal parts of sugar, water, 6 fresh ginger slices, lemon zest and bring to boil until sugar is dissolved.
  5. Let cool. Place extra syrup refrigerator in a container and use for about a week.
  6. For each cocktail, add the first 6 ingredients in a cocktail shaker and shake until blended.
  7. Strain into glass and garnish with apple slices and cinnamon stick.
